Watch out, this meatloaf will disappear fast!
1 ¼ lbs. Lean Ground Beef
2 tsp Olive Oil
½ Cup Onion, chopped
½ Cup Bacon, cooked and crumbled
¼ Cup Dry Breadcrumbs
1 TBSP Yellow Mustard
1 TBSP Worcestershire Sauce
½ tsp Pepper
½ Cup Cheddar Cheese, cubed or shredded
¼ Cup Ketchup
Preheat oven to 350°. Line a cookie sheet or roasting pan with parchment paper and spray with nonstick cooking spray. Sauté onions in oil until golden brown. Remove from heat and stir in mustard and Worcestershire sauce. In a large bowl, combine onion mixture, beef, bacon, breadcrumbs, salt, pepper, egg, 2 TBSP of water and cheddar cheese. Mix together until well blended. Form 4 individual meatloaves and place on prepared pan. Spread 1 TBSP ketchup over each meatloaf. Bake for 25 minutes or until cooked through and enjoy!
