Enough of the corny jokes; this Southern staple is a winner with everyone!
1 Stick Butter, melted
1/3 Cup Sugar
¼ Cup Honey
1 Cup Buttermilk
1 Cup All-Purpose Flour
1 Cup Cornmeal
½ tsp Salt
½ tsp Baking Soda
Preheat oven to 375°. Coat an 8×8″ dish with cooking spray. Combine butter, sugar and honey. Whisk in eggs beating until smooth. Add buttermilk and mix to combine.
Whisk together flour, cornmeal, salt and baking soda. Gradually add the dry ingredients to the wet ingredients, stirring until only a few lumps remain. Pour batter into pan and allow to rest for 3 minutes before baking.
Bake for 25-30 minutes or until top is golden brown and toothpick inserted int the center comes out clean. Allow to cool at least 15 minutes before serving; enjoy!
