My dear friend Jean shared this recipe with me and it instantly became my 3 kids’ favorite meal. The children in Jean’s family even request it for Christmas dinner!
3 lbs. Extra Lean Ground Beef
1 Onion, chopped
15 oz Tomato Sauce (add more if necessary to moisten)
½ Cup Ketchup
Dill Pickle Slices (optional)
10 THIN Refrigerated Biscuits (not Grands)
Preheat oven to 400°. Brown beef and onion in a skillet and drain. Stir in tomato sauce & ketchup; heat through.
Spread a thin layer of meat mixture over the bottom of 9×13” dish. Cover sauce with dill pickle slices. Add remaining meat mixture.
Cover the top of meat sauce with cheese slices. Spread biscuits over top of casserole, cutting into pieces if necessary to cover the top.
Bake 25-30 minutes or until the biscuits are a deep golden brown; enjoy!
