Sure, this may look green to kids, but if you can get them to try it for Popeye, it is very mild and cheesy. Feel free to add more cheddar or use sharp cheddar if you would like to make it extra decadent.
I enjoy this for breakfast since it’s full of egg whites and satisfies me until lunchtime. For my kids, it goes over better with dinner and pairs nicely with meat or fish. It makes a nice large pan that can be reheated in the microwave and lasts for at least a week in the fridge. It sure beats eating spinach from the can like our good ol’ friend Popeye used to do!
32 oz. (2 lbs) Frozen Chopped Spinach, thawed and squeezed dry
1 Can Artichoke Hearts, roughly chopped
16 oz. Cottage Cheese
1 Cup Chopped Onion
32 oz. (1 large carton) Egg Beaters
1 Cup Cheddar Cheese
1/2 Cup Jarred Roasted Red Peppers or Pimientos, chopped
1/4 Cup Seasoned or Plain Bread Crumbs
2 tsp Garlic Powder
2 tsp Dried Oregano
Preheat oven to 375°. Spray the bottom and sides of a 9×13″ baking pan. Sauté the onion, then mix all ingredients and spread into prepared pan. Bake for approximately one hour, or until set and edges are lightly browned.
