Dan Pashman, the host of my favorite Podcast “The Sporkful” lays out a two-part test for defining a sandwich:
1. You must be able to pick it up and eat it with your hands and without your hands touching the fillings (If fillings ooze out it may be a bad sandwich, but it’s still a sandwich).
2. The fillings must be sandwiched between two discrete food items.
Therefore, Dan does not consider a burrito a sandwich. Whether or not you agree, I think we can all agree on this…
THERE IS NO SUCH THING AS A BURRITO THAT’S TOO BIG!
20 oz. Canned Chicken, drained
2 Cups Light Sour Cream
1 (10.75 oz.) Can Condensed Cream of Chicken Soup
2 Cups Light Cheddar Cheese
1 (4 oz.) Can Chopped Green Chilies, drained
2 TBSP Onion, sautéed until softened
10 Whole Wheat Flour Tortillas
1 Cup Light Cheddar Cheese
Preheat oven to 350°. Combine chicken, sour cream, soup, 2 cups cheese, and onion. Divide mixture onto each tortilla. Roll up and place seam side down into a greased 9×13″ pan. Bake for 25 minutes. Sprinkle with remaining cheese and broil just until cheese lightly browned.
