My boys picked this week’s recipe. It’s perfect for busy mornings and guarantees smiles. It also has FAR less sugar and more fiber than the typical kid-friendly breakfast. The “jam” may be prepared ahead and stored for at least a week in the fridge, so make a big batch and breakfast is ready for the week!
Ezekiel English Muffins, toasted
Cream Cheese or Nut Butter
Fresh Strawberries, cleaned and hulled
Pinch of Stevia (optional)
In a food processor, purée strawberries until smooth. If your kids are used to sweeter jams, add a bit of Stevia to taste. Spread english muffins with cream cheese or nut butter, and top with strawberry purée. Last but not least, go ditch those sugary jams floating around your fridge and send your kiddies to school focused instead of sugared up!
