If you’re aiming to give okra a try, you’re in for a real treat. I do declare this healthy version tastes just as good as the fried version, so you can go hog wild! Give it a try with some oven-fried chicken; it’s sure to please Southern Belle’s, fella’s, and spring chickens alike.
1 ½ Cups Yellow Cornmeal
¾ tsp Kosher Salt, divided
½ tsp Black Pepper
Dash of Ground Red Pepper
½ Cup Fat-Free Buttermilk
1 Large Egg, Lightly Beaten
1 lb. Fresh Okra Pods, trimmed and cut into ¾ inch slices (about 3 cups)
Preheat oven to 450°. Combine cornmeal, ½ tsp salt, black pepper, and red pepper in a dish, set aside.
Combine buttermilk and egg in a large bowl, stirring with a whisk. Add okra, toss to coat. Let stand 3 minutes.
Dredge okra in cornmeal mixture. Place okra on a baking sheet covered with parchment paper or coated with cooking spray. Lightly coat okra with cooking spray.
Bake for 40 minutes or until golden, turning once. Sprinkle with remaining salt, adding additional salt if desired.
