Cobblers originated in the British American colonies. English settlers were unable to make traditional puddings due to lack of ingredients, so they covered a fruit filling with a layer of uncooked plain biscuits or dumplings, fitted together.
These settlers were so fond of these cobblers that they often served them for breakfast or as a main course. It was not until the late 19th century that they became primarily desserts.
I say we stick with the original custom and enjoy this easy cobbler any time of the day!
3 Cups Frozen Strawberries, thawed
3 Cups Frozen Blueberries, thawed
1/3 Cup Flour
1 1/2 Cups Sugar, divided
3 Cups Biscuit Mix
1/4 tsp Nutmeg
1/2 tsp Cinnamon
1/4 Cup Melted Butter
1 Cup Fat Free Half & Half
2 Eggs, slightly beaten
Preheat oven to 350°. Drain the berries and place in a large bowl. Combine flour and 1 cup sugar. Add to the berries and toss to coat. In a separate bowl, combine biscuit mix, remaining 1/2 Cup sugar and spices. Add butter, milk and eggs. Stir until evenly moistened. Place berries in a greased 11/7″ greased baking dish. Spread the batter evenly over the top. Bake for 45 minutes, or until crust is golden brown. Serve with vanilla ice cream and enjoy!
