It’s finally strawberry season! If you’re a chocolate covered strawberry fan, you’ll quickly fall in love with this pie. With a dark chocolate crust, fresh strawberry filling and white chocolate drizzle, it’s sure to please any chocoholic.
1 ¼ Cups Oreo Cookie Crumbs (about 20 cookies)
3 TBSP Butter, melted
1 ½ Cups Sliced Strawberries
½ Cup Sugar
3 TBSP Boiling Water
1 Envelope Unflavored Gelatin
4 Cups Sliced Strawberries
½ Cup White Chocolate Chips
Preheat oven to 400°. Combine crumbs and butter, tossing with a fork until moistened. Press crumb mixture into a 9-inch pie plate coated with cooking spray. Bake for 10 minutes. Cool on a wire rack.
Place 1 ½ cups sliced strawberries and sugar in a food processor or blender. Process until smooth.
Combine boiling water and gelatin in a bowl, let stand 5 minutes. Stir until gelatin dissolves. Stir in pureed strawberry mixture.
Spoon 4 Cups sliced strawberries into cooled crust. Pour gelatin mixture evenly over strawberries. Chill, uncovered 2 hours or until set.
Place white chocolate chips in a small ziplock bag, do not seal. Place upright in the microwave on cook on medium heat for 20 second intervals until chips melt. Snip a tiny hole in 1 corner of bag, drizzle chips over pie. Refrigerate until serving.
