3 ½ Cups Milk
1 ¼ Cups Part-skim Ricotta Cheese
1 tsp Salt
½ tsp Pepper
5 Large Eggs or 1¼ Cups Eggwhites
1 Plum Tomato, diced
1 ½ Cups Frozen Corn
1 (16 oz) Loaf Bread, cubed
1 ½ Cups Mozzarella or Cheddar Cheese
1 ½ Cups Ham, diced
Whisk together milk, ricotta, salt, pepper, and eggs. Combine tomato and corn. Arrange half of the bread cubes in the bottom of a 9×13″ baking dish coated with cooking spray. Sprinkle with half of the tomato mixture, half of the cheese, and half of the ham. Pour half of the milk mixture over top. Repeat procedure with remaining bread, tomato mixture, and milk mixture. Sprinkle with remaining ham and cheese. Cover and refrigerate 8 hours or overnight.
Preheat oven to 350°. Uncover strata. Bake for 50-60 minutes or until set. Enjoy!
