Deviled eggs are the best; they can be made ahead and are great for breakfast or an after-school snack. Why not make them even better by replacing some of the mayo with an avocado? The combination of healthy fats and protein will prevent tummy rumbling episodes in school. If you want to be really devilish, add a teaspoon or two of freshly squeezed lemon or lime juice, and decorate the top of each egg with a slice of black olive or bacon. Kids love peeling the eggs, smashing the ingredients, filling and decorating them. Just hand them the ingredients and watch them go!
10 Hard-boiled Eggs
1 Avocado, peeled and pitted
1/4 Cup Mayonnaise
Coarse salt to taste (optional)
Slice eggs lengthwise, remove yolks, and smash with avocado, mayo, and salt to taste (if using). Spoon filling into egg halves and sprinkle with paprika.
