Here’s a scrumptious pie that helps you use up those turkey or chicken dinner leftovers. You can use up everything in your fridge without the need to serve up the same meal twice in a row! If you don’t have leftover turkey or chicken, you can use ground turkey or beef and make a couple of pies to keep in your fridge for a quick weeknight dinner.
Cooked Turkey, Chicken, or Extra Lean Ground Beef or Turkey
Gravy (Chicken, Turkey, or Beef)
Cooked Carrots, Corn, Peas, Green Beans, or Frozen Mixed Veggies, thawed
Preheat oven to 375°F. Cube turkey if using leftovers. Stir in veggies and enough gravy to moisten. Spread mashed potatoes over pie. If needed, add just enough liquid to leftover potatoes so that they are easier to spread. Sprinkle with paprika, and bake uncovered until heated and meat mixture begins to bubble.
If your pan is quite full, you may need to place a baking pan or foil on a rack below your pie to catch drips.
You may warm all ingredients before assembly if you prefer your pie to bake faster. Serve with ketchup.
