Blueberries are not just low in calories, they are also high in antioxidants, fiber, and vitamins. They can protect against cancer, aging, memory loss, and infections. Most importantly, they are delicious and the perfect excuse to indulge in this easy dessert!
4 Cups Blueberries (fresh or frozen)
1 TBSP Cornstarch
¼ Cup Sugar
1 TBSP Lemon Juice
¾ Cup Oats
1/3 Cup All-Purpose Flour
¼ Cup Firmly Packed Brown Sugar
¼ tsp Salt
3 TBSP Butter, softened, or Light Benecol Spread
Preheat oven to 375°. Place blueberries in a large bowl and stir in cornstarch , sugar, and lemon juice. Set aside for a few minutes. Combine oats, flour, brown sugar and salt. Using your fingers, add butter and mix until crumbly.
Spread blueberries into a greased 8×8″ dish. Sprinkle with oat mixture. Bake for 45 minutes. Cool on a wire rack or enjoy warm with frozen yogurt; enjoy!
