As you can see, all three of these chickens are having, well, let’s just say a really bad day.

10-18 Chicken Tenders (depending on size)
1 Can (10 oz.) Medium Red Enchilada Sauce
1 Can Green Chilies
1/3 Cup Black Olives, sliced
Mexican Blend Cheese to taste
Sour Cream for serving (optional)
Preheat oven to 400°. Spray a 9×13″ pan with nonstick cooking spray. Spread chicken into pan in a single layer. Spread enchilada sauce over chicken, then sprinkle with green chilies, olives, and cheese.
Bake, uncovered, 20 minutes or until chicken is cooked through. Sprinkle with cilantro and serve with sour cream if desired.
