Mozzarella was once made with water buffalo milk. These buffalos were raised in southern Italy, but intensive farming was not possible. Today mozzarella can also be made with cow’s milk or a mixture of both. Buffalo milk has almost double the solid content of cow’s milk and has a higher percentage of protein and fat. The higher fat content of buffalo milk lends a sweeter, creamier taste and mouthfeel than the cow’s milk mozzarella. Either way, mozzarella is the most popular cheese in the United States. Pair it with veggies and you have the perfect side dish that pairs well with any meal!
