This pasta is absolutely addictive. For a less spicy version, cut back on the taco seasoning or use plain diced tomatoes instead of the Rotel. Enjoy!
2 lb. Extra-lean Ground Beef
1 Package Mild Taco Seasoning
2 Cans Rotel Tomatoes and Chilies, 10 oz. each
1 Can Tomato Paste
1 Lb. Whole Wheat Spaghetti
6 Cups Water
2 Cups Mexican Cheese
Preheat oven to 350°. Brown beef; drain. Stir in taco seasoning. Add tomatoes, tomato paste, and spaghetti. Cover with 6 cups water. Bring to a boil and reduce heat to a simmer. Cover and cook until pasta is cooked and water is absorbed, about 15 minutes.
Spread spaghetti into a greased oven-proof dish. Cover with cheese and bake until cheese is melted. Broil for one minute or until golden brown and enjoy!
