8 Chicken Breasts
1 Can Artichoke Hearts packed in water, drained and chopped
10 oz. Frozen Chopped Spinach, thawed and squeezed
1 Clove Garlic, minced
½ Cup Greek Yogurt
½ Cup Light Mayonnaise
½ Cup Parmesan Cheese
Preheat oven to 375°. Spray a 9×13″ baking dish with nonstick cooking spray. Place chicken into baking dish. Sprinkle with salt and pepper and bake 15 minutes.
Meanwhile, in a medium bowl, combine remaining ingredients and spread over chicken. Bake 20-25 minutes longer. Let stand about 5 minutes before serving.
