TOP OF THE MUFFIN TO YA!
I’m not bluffin’, a microwavable muffin!
This recipe is from a Dr. Oz episode featuring Dr. William Davis, author of Wheat Belly 30 Minute (or Less!) Cookbook. Since I am not a big fan of baking, I love the idea of microwaving muffins for a real breakfast treat. It’s perfect to make for the kids before school or as an after school snack. Just whip up the baking mix and you’re good to go for weeks!
One Small Step for Muffins, One Giant Leap for Muffinkind.
4 Cups Almond Meal/Flour
1 Cup Flaxseeds, ground
¼ Cup Coconut Flour
2 tsp Baking Soda
Combine all ingredients and you’re baking mix is complete!
½ Cup Baking Mix (above)
¼ Cup Frozen Blueberries, Blackberries, or any Berry Combo
4 tbsp Milk (use more or less as needed)
1 tbsp Butter, melted
¼ tsp Cinnamon
Sweetener equal to 1 tbsp Sugar (I use a sprinkle of Stevia)
Pinch of Sea Salt (optional)
Combine baking mix, cinnamon, sweetener, and salt. Whisk in egg. Add milk, butter, and berries and whisk thoroughly. Use a rubber spatula to scrape mixture into a greased mug or 10 oz. ramekin. Microwave on high for 3 minutes, or until a wooden pick inserted in the center comes out clean. Allow to cool for 5 minutes.
