This dish will win over just about anyone’s heart!
6 oz. Bacon, cut crosswise into ¼-inch thick strips
2 TBSP Butter
2 TBSP Flour
1 Cup Milk
½ Cup Heavy Cream
1 Cup Swiss Cheese
1 Cup Sharp Cheddar Cheese
8 oz. Whole Wheat Elbow Macaroni
Preheat oven to 350°. In a large saucepan, cook bacon over medium heat, stirring often, until crisp. Drain and set aside. Add butter to skillet and stir until melted. Add flour and stir for one minute. Whisk in milk, cream and 2 cups water. Bring to a boil, reduce the heat to medium, continue to whisk, and simmer until slightly thickened. Combine cheeses; stir one cup of the cheese mixture and reserved bacon into sauce.
Stir in the macaroni, pour into a greased 8×8-inch baking dish, and sprinkle with remaining cheese. Bake 25-30 minutes or until the sauce bubbles and pasta is tender. Let rest 10 minutes before serving.
