As Jamie Oliver says, “If you have to cook 3 meals every day until the day you die, you might as well be good at it.” That doesn’t mean it has to be difficult…give this easy, cheesy Mexican Lasagna a whirl, or better yet, have your kids make it for you! It’s a wonderful change from your typical taco night. Delicioso!
1 lb. Ground Turkey Breast
1 Jar (26 oz.) Pasta Sauce
2 Cups Frozen Corn
1 Can (15.5 oz.) Black Beans, rinsed and drained
1 Can (4 oz.) Chopped Green Chilies
1 Package Taco Seasoning Mix
6 Large Ezekiel or Whole Grain Tortillas
2 Cups Shredded Sharp Cheddar, Mild Cheddar, or Mexican Blend Cheese
1 Jar (8 oz.) Taco Sauce or Salsa
Preheat oven to 350°. Brown turkey in a skillet; drain. Stir in pasta sauce, corn, beans, chilies and taco seasoning.
Spread half of the sauce mixture in a 13×9-inch baking dish. Arrange three tortillas over sauce, cutting tortillas in half to make it easier to arrange along sides. Sprinkle with half of the cheese. Layer remaining sauce and tortillas. Pour taco sauce or salsa over tortillas.
Cover and bake 20 minutes. Uncover and top with remaining cheese and bake an additional 10 minutes or until heated through.
