A guy walks into his doctor’s office. A banana was stuck in one of his ears, a sweet potato in the other ear, and a carrot stuck in one nostril.
The man says, “Doc, this is just awful, what’s wrong with me?”
The doctor says, “Well first of all, you need to eat more sensibly.”
Sweet potatoes were grown in Peru as early as 750 BC. They are the 6th principal world food crop, and approximately 90 percent of the worlds’ crop is grown in Asia. This recipe could not be easier to make and is absolutely delicious with any meat or fish dish. It can be made ahead and heated in the oven or microwave. It’s an easy way to get your kids to eat more sensibly!
4 Large Sweet Potatoes
½ Cup Butter, softened
¼ Cup Pure Maple Syrup (or to taste)
Peel and dice the sweet potatoes. Boil in salted water until tender. Drain and mash with butter. Stir in maple syrup, adding more to taste. Enjoy!
