Mom takes her sick child to the pediatrician’s office. Cheese is stuck in one of his ears, turkey in the other ear, and a lasagna noodle stuck in each nostril. Mom asks, “What’s wrong with my child?” The doctor says, “Well, first of all, your child needs to eat more sensibly.”
I was skeptical that any meal on the planet could possibly replace Savory Tortiére (see our blog for the recipe!) as my boys’ favorite dinner. Well, step aside until tomorrow night Tortiére, Scrumptious Crockpot Lasagna has taken your place!
I haven’t bothered to make lasagna in the past simply due to the time involved, until a friend gave me this recipe that takes just minutes to assemble. Full of cheese, prepared with ease, and always guaranteed to please!
1-1½ lbs. Ground Turkey Breast
35 oz. Spaghetti Sauce
40 oz. Fat Free, Lowfat, or Regular Cottage Cheese
8 oz. Italian Blend or Mozzerella Cheese
½ Cup Parmesan, Asiago, or Feta Cheese
10 Lasagna Noodles
Spray the interior of the crockpot with cooking spray. In a large nonstick skillet, brown the ground turkey and onion. Stir in spaghetti sauce.
Spread 1/4 of the meat sauce into the crockpot. Arrange 1/3 of the uncooked noodles over the sauce, breaking them up as necessary to fit better.
Combine the cheeses in a bowl. Spoon 1/3 of the cheese mixture over the noodles.
Repeat layers two more times. Top with remaining meat sauce.
Cook on low 4-5 hours. Uncover and sprinkle with parmesan or asiago cheese.
Let stand 10 minutes before serving.
