This unique combination of shrimp, soy sauce, cheeses, and cabbage are incredible and make fun finger food. Eggroll wraps are typically found near wonton wrappers in the refrigerated produce section of your grocery store. If they are unavailable, feel free to use wonton wrappers instead. Serve rolls with the leftover coleslaw mixed with your favorite dressing. Creamy, crunchy, and addictive!
1 lb. Uncooked Shrimp, peeled and deveined
6 oz. Reduced-fat Cream Cheese, softened
1 Cup (4 oz.) Shredded Part-skim Mozzarella Cheese
2 ½ Cups Bagged Cabbage and Carrots
1 TBSP Reduced-sodium Soy Sauce
8 Large Eggroll Wraps
4 TBSP All-purpose Flour
Soy Sauce, Mango Chutney, or your favorite dipping sauce (optional)
Preheat oven to 400°. Chop shrimp into ¼ inch pieces. Combine cream cheese, mozzarella, and soy sauce. Stir in cabbage and shrimp. For each shrimp roll, place about ¼ cup mixture across bottom third of wrap to within ¼ inch of bottom and side edges. Using a whisk, combine flour with enough water to make a very thin paste. Brush bottom and side edges with flour mixture. Fold side edges over ¼ inch. Brush all edges with flour mixture. Gently roll up from the bottom and seal with a bit of the flour mixture.
Lightly spray rolls with nonstick cooking spray. Place on a baking sheet coated with nonstick cooking spray. Bake 10 minutes; turn and bake another 10 minutes or until golden brown.
