1 ½ lbs. Lean Ground Beef
1 Packet Taco Seasoning Mix
1 (15 oz.) Can Black Beans, drained and rinsed
1 (15 oz.) Can Tomato Sauce
1 Can Corn, drained
1 ½ Cups Shredded Cheddar Cheese
1 Cup Tortilla and/or Taki’s Chips
Light Sour Cream for serving
Preheat oven 400°. Brown meat in a large skillet; drain. Stir in seasoning mix, beans, tomato sauce and corn. Bring to a simmer. Reduce heat to low and simmer for 15 minutes.
Spoon mixture into a 2-quart greased baking dish. Sprinkle with cheese and chips. Bake for 25-30 minutes or until golden brown. Serve with sour cream and enjoy!
