What vegetable can you throw away the outside, cook the inside, eat the outside and throw away the inside?
That’s right, CORN! If your family and guests compliment you when you make this delicious side dish, just say, “Awww, Shucks!”
Ok, enough of the corny jokes, here is a great recipe and a nice change from plain ol’ canned corn.
1 Large Bag Frozen Corn
1-2 Containers Grape Tomatoes, halved
12 oz. Container Feta Cheese
½ Bunch Cilantro, finely chopped (or to taste)
Juice of 3 Limes
1/3 Cup Extra Virgin Olive Oil
½ tbsp Chili Powder
½ tbsp Ground Cumin
Preheat oven to 400°. Spread frozen corn on a cookie sheet (greased or layered with parchment paper). Roast for 20-25 minutes, turning once with a spatula. In a large bowl, mix corn, tomatoes, feta, and cilantro. In a small bowl, whisk together lime juice, oil, chili powder, and cumin. Mix with corn mixture and enjoy at room temperature or chilled.
