If you enjoy a nice turkey dinner this Christmas, here is a yummy way to use up those leftovers…sweet!
1 lb. Ground Turkey Breast
2 Cups Cooked Brown Rice
1 (10¾ oz.) Can Condensed Tomato Soup
½ Cup Salsa
1 (4 oz.) Can Chopped Green Chilies, drained
1 Package Dried Taco Seasoning Mix
1 Plum Tomato, chopped
1 Cup Cheddar or Mexican Blend Cheese
2 Cups Corn Chips, crushed
Preheat oven to 350°. Brown turkey; drain. Stir in cooked rice, soup, chilies and taco seasoning mix. Spoon into a greased 11×7-inch 2-quart baking dish. Top with tomatoes, cheese, and corn chips. Bake for 30-40 minutes or until heated through.
